Saturday was born in Atlanta, Georgia, on June 18, 1975, which makes him 48 years old as of 2024. In 1993, he was a student at Shamrock High School in Decatur, Georgia.

Ron Gartrell, his high school coach, stated on Saturday in a 2012 Sports Illustrated article, “Our offensive output was 80% behind Jeff.

Because teams raced away from Jeff, we lined up Jeff on one side of the defense and all of our other strong players on the other.”

In the same interview, Gartrell said that coaches at Georgia and Tennessee thought Saturday was too short of competing in the league, proving that he could not convince Southeastern Conference schools of his ability.

Because of Gartrell’s acquaintance with UNC’s then-defensive coordinator Carl Torbush, he was offered a scholarship by the University of North Carolina.

Saturday was a four-year letterman for North Carolina Tar Heels football team from 1994 to 1997 after Jeff received an athletic scholarship to attend the University of North Carolina located in Chapel Hill.

He served as one of the Tar Heels’ team captains in 1996 as a junior and once more in 1997 as a senior. First-team All-Atlantic Coast Conference (ACC) center pick in 1996 and 1997, as well as 1997 Academic All-ACC selection.
